It is being reported in the Daily Mail today that modern cooks are finding their way back to investing in and using pressure cookers.
You may remember your parents using pressure cookers in the 1970s, but since then they have largely lay dormant at the back of cupboards or been consigned to a skip.
However in todays lean times a pressure cooker actually makes a whole lot of sense. People are returning to the cheaper more flavoursome cuts of meat like shoulder, shin and neck that traditionally require hours in a casserole, but can be cooked in as little as 30-45 minutes in a pressure cooker assuring tenderness and a large energy bill saving.
In the past there were fears about using pressure cookers and tales of food exploding at speed onto the walls, but new designs have largely dealt with those issues.
Pressure cookers are ideally suited to one-pot dishes that would normally require long slow cooking .. i,e, soups and stews.
